How to make Soda Bread Pizza with Roasted Peppers, Goats Cheese and Rocket

Soda bread is a very traditional Irish bread. The dough doubles up extremely well as a pizza base. It is so simple and quick to make. I love the idea of home made pizza, but rarely make it because of the time it takes to rise and prove the yeast based pizza dough. As there is no yeast in this recipe, it makes the process slightly quicker and easier. serves 2/3 people 200g white flour 300ml buttermilk or natural yoghurt 1 tsp of bicarbonate of soda/bread soda a pinch of salt, pepper and sugar 1 jar of char grilled or roasted peppers A handful of rocket A small round of goats cheese 2 heaped tbsp of tomato purée mixed with 1 tbsp of olive oil. Method: Mix the dry ingredients for the base in a bowl. Add the buttermilk, and bring the mixture together until you have a slightly sticky mixture. Transfer the dough to a baking tray lined with baking parchment and spread out into a square. Spread the tomato purée and olive oil mixture over the base. Now add the rocket, followed by the peppers and top off with the goats cheese, roughly torn into chunks. Bake in a preheated oven at 180 degrees for about 30 minutes.
